Shopping List:
• Fish pie mix (diced salmon, cod, smoked haddock & king prawns)
• Couple of sweet potatoes, peeled and chopped
• 100g of flour
• Half a pint of milk
• Handful of smoked grated cheese
• Spinach

• Butter
• Lemon wedge to garnish

1. Gently sauté the fish pie mixture with some butter for around 10 minutes.

2. In a separate pan melt a knob of butter, stir in the flour, cook on a low heat until the mix turns pale.

3. Slowly add milk to the mixture, whilst whisking to prevent lumps, before stirring in your cheese.

4. Meantime boil the sweet potatoes for around 10 minutes until tender.

5. Mash the sweet potatoes with plenty of butter until creamy.

6. Place the fish mixture in an oven dish with the cheese sauce.

7. Pipe a sweet potato mash lid, sprinkle over the chives, and Lemon & Mustard Crumb.

8. Oven bake your fish pie for around 30 minutes, until bubbling and crispy.

9. Whilst your pie bakes, wilt spinach with a little butter and toast your soda bread.

10. Plate up on a chunky wooden board with a wedge of lemon. Enjoy!
